It’s not really news that eating salmon is good for you. The omega-3 in salmon helps your skin retain moisture, and I’ve heard that it can also help to give your hair a shiny boost as well. It is definitely one of my favorite foods, and in honor of the fact that I’m craving it right now, I thought I’d share this recipe that my mom taught me. It’s a really quick and easy way to prepare a delicious and skin-healthy meal!
Walnut Crusted Salmon
Ingredients:
– 2 skinned salmon fillets
– Ground walnuts, about 1 1/2 cups
– Dried cilantro
– Olive oil
– 1 garlic clove
– 1 package baby spinach leaves
1. In a medium bowl, combine ground walnuts and cilantro. We rarely cook from recipes at home, so just add as much cilantro as you’d like. I suggest adding until the walnuts seem nicely flecked with cilantro, but not overpowered with green!
2. Heat about a tablespoon of olive oil in a skillet on the stove top. While the oil heats, press each side of each salon fillet into the nut mixture, coating them evenly.
3. Cook each side of the fillet until brown, about 6 minutes. Then flip the fillets and let them cook an additional 5 or 6 minutes on the other side. When you cut into the fillet, the salmon should be pink, but NOT transparent.
4. Remove the fillets from the pan and set aside. Rise the pan, and add another tablespoon of oil. Add about one clove of crushed garlic and half a bag of baby spinach.
5. Stir to coat the spinach and let sit. In just a few minutes the leaves will begin to “wilt” and become soft. When they have shrunk and become tender, divide the leaves between two plates and add a salmon fillet on top of each.
